With flavors that range from mildly sweet to tart and tangy, blueberries are nutritional stars bursting with nutrition and flavor while being very low in calories. Recently, researchers analyzed 60 fruits and vegetables for their antioxidant capability.

Blueberries came out on top, rating highest in their capacity to destroy free radicals. Blueberries neutralize free radical damage to the collagen matrix of cells and tissues, that can lead to cataracts, glaucoma, varicose veins, hemorrhoids, peptic ulcers, heart disease and cancer.

Blueberries are not only tasty, but they provide bursting nutritional value. Fresh blueberries contain high levels of vitamin C. Also, a blueberry has manganese, dietary fiber, vitamin E and contains only 81 calories.

Though the blueberry is best in taste if eaten fresh, it can also be eaten in the form of juice, jam and jelly. The blueberry may serve the purpose of dessert and act as toppings on cake, ice cream and pies.
